BLT with Roasted Garlic Hummus and Avocado

I swap out the mayo for roasted garlic hummus. You won't notice it one bit...but your waistline might.

Ingredients:

4 slices of good quality bacon

1 heirloom tomato, sliced thin

1 avocado, sliced thin

1 handful of Bright Farms Baby Arugula, packed tightly

2 slices of Wheat bread, toasted

1/4 cup, roasted garlic hummus to spread

A couple of toothpicks (if you want to be cute about it)

Directions:

Line a baking sheet with bacon slices and place in a cold oven. Turn the oven on to 400 degrees. This allows the bacon fat to slowly render in the beginning of the cooking process and allow the bacon to become perfectly cooked. Keep an eye on them and flip every few minutes to ensure even cooking. Once the fat is fully rendered and the bacon has browned on both sides, transfer to some paper towels to absorb all the grease.  Set aside.

Toast the bread.

Slice the tomato and avocado thinly.

To Assemble. 

A good sandwich is all about the assembly and the proportion of ingredients. Follow these steps for an all-star BLT.

1. Spread the hummus on both sides of the toast. Generously, if you wish.

2. On the bottom piece of toast, start your layering with a tightly packed handful of the baby arugula. 

3. Once the arugula is packed, keep it in place by topping with the tomato slices. 2-3 big slices should due the trick. Remember, too much of anything could throw the proportions off, overpowering the sandwich with one thing.

4. On top of the tomatoes, place the avocado slices. You can even fan them out so they look really nice inside the sandwich. 

5. The last layer is the bacon. This is the ingredient I’d suggest using as little or as much as you’d like. 

6. Finally, top the sandwich off with the other piece of bread and keep them in place with toothpick while you carefully cut the sandwich in two pieces, making sure all those perfectly placed ingredients don’t coming tumbling out of place.
